Brevity is beautiful.
As is limitation, underexpression, and suggestion.
That's why I tumble.
A rainy day treat: coffee bread and a green tea latte.
For me, every other Wednesday is a holiday. I like to call Tonxday.
It’s when I receive a 12 oz. bag of beautifully sourced and roasted beans from Tonx, a company that only sells coffee by subscription.
The worst part is checking my mailbox every hour to see if my coffee’s arrived.
The best part is opening up the package, reading the notes that they include with each shipment, and burying my nose into the silver bag, taking a huge whiff of the deliciously complex coffee.
This one was a Bambu Bourbon coffee from El Salvador. It tasted great in a latte; I can’t wait to try it in a pour-over.

Double rosetta and double ristretto at Belief Coffee, Hongdae.
Paul Bassett sources cups that fit right under their portafilter spouts, making for quite a show when pulling shots for iced lattes.
Favorite espresso drink: the cortado, aka the gibraltar.
A little less that 2 ounces of espresso, a little more than 2 ounces of milk: almost a one-to-one ratio.
You can taste both the milk and the espresso; this drink makes you slow down and enjoy the sweet balance of things.
The visual appeal is also nice.
Practice really does make perfect.
Or as close to it as you’re ever going to get.
